This study presents a significant contribution to the ICSB2024, particularly aligning with the main theme “Empowering Entrepreneurship for a Better Future.” Through a systematic literature review, this study sheds light on emerging trends and gaps in existing research and provides a foundation for further research on business model innovation and sustainability challenges in the foodservice sector. By examining the intersection of sustainability innovation and business model dynamics, this research aims to illuminate pathways towards sustainable development in the Swiss foodservice industry.
